Fall and winter are fantastic times in Spanish class. There are so many fun cultural elements that you can incorporate during this time. Starting with Día de los Muertos and continuing after the new year with Día de los Reyes Magos. I particularly love Thanksgiving. Even though it's an American holiday, I enjoy using this time to have students reflect on things in their lives for which they can be thankful. They can often get caught up in themselves, so I love the self reflective moments that I can incorporate in the target language. :) This is also a great way to expose them to new vocabulary which they may not have had a reason to use prior to this. I created a "Thankful Turkey" which students can use to add their own information to the prompt "Estoy agradecido(a) por...". Lower level students can simply add words. Upper level students can complete with more advanced sentences. Students can then color, cut out, and either add the turkey to a notebook (it's sized for an interactive notebook). I use the class set and create a nice bulletin board. Here's the template:

First up, I want to share a couple of seasonal products. The week before Thanksgiving, in addition to our Thankful Turkey bulletin board, my students create Thanksgiving Flip Books. I have them add the books to their interactive notebooks, but they can certainly work as a stand alone activity. These are perfect for beginning Spanish students to use to talk about how they feel, what they do, where they go, etc. during the holiday break.
Before the Christmas break, students often get restless and need a creative review activity. Here's a set of differentiated Spanish Christmas Color-By-Numbers. This works great as a fast finishers activity as well.
Speaking of students getting restless, this time of year it's great to incorporate some games. Use this bundle of "Yo tengo...¿Quién tiene...?" verb games which require the whole class to interact in conjugating verbs.
